Nut Free Pesto
I never used to be able to buy a jar of pesto due to an intolerance to pine kernels and so have always made my own - a recipe which I've adapted and updated as my knowledge of nutrition has expanded. Each jar of my homemade pesto is packed full of iron, vitamin C, antioxidants and folate, making it a nutrient-rich quick fix on a weeknight with wholewheat pasta or roasted with vegetables in a tray bake. Ingredients: watercress, spinach and/or brocoli, fresh basil leaves, garlic, lemon juice, omega seed mix (sunflower seeds, golden linseeds, brown linseeds and pumpkin seeds), extra virgin olive oil, nutritional yeast
