Ruthie’s Energy Bites
So many of my lovely followers have asked me to share my recipe for these very popular energy bites and so here we go…
I tried various different recipes from foodies I follow online before settling on this as the perfect combination - in my mind - for my own creation. And I absolutely love making them…there’s something quite therapeutic about the whole process!
They are so incredibly versatile - making the perfect ‘grab and go’ snack when you’ve got a busy day ahead; a great energy boost for long distance training runs or the perfect pick-me-up for a lengthy study session. I’ve almost always got a snack pot of these in my handbag or the car - not least to help me resist the temptation of a sneaky chocolate bar when the hunger cravings hit… I guarantee these will instead give you a sustained energy boost for body and mind! x
Ingredients:
1.5 cups of Mejdool dates ( - full of fibre and naturally sweet)
1 cup of rolled oats ( - preferably organic, or gluten free if you have allergies)
1/2 cup of mixed dried blueberries and cranberries (ideally unsweetened)
1/3 cup of mixed seeds ( - I favour Grapetree’s Omega seed mix)
1/4 cup of coconut oil ( - to bind it all together, or alternatively use extra virgin olive oil)
1 tsp ginger
1 tsp cinnamon
Desiccated coconut to roll them in
Method:
As long as you have access to a blender or food processor, this really couldn’t be simpler:
Mix all of the ingredients together until they form a slightly sticky paste / dough.
Divide into small balls, approx 15-18g each is the perfect size!
Shape and roll each in a sprinkling of desiccated coconut
Using a mini muffin tray ( - ideal but not essential), leave to set slightly in the fridge for an hour or so
Best stored in an airtight container in the fridge prior to devouring!!
